I'm looking for a book on the basics of nutrition.
Something on the level that could be used in an undergraduate majors
class, yet keep my interest.
I *don't* want a book that recommends diets (i.e. if it has a review of
- or especially a recommendation for - Atkins or any other diet, it's
right out) or any other 'fadish' or culture-related phenomena, or much
less a hint of pop nutrition.
It must have hard science behind it, something I can take to my nurse
and physician friends and they will never say "thats not the way it is,
it really works like...", but rather they'd say "oh, I've heard of that
author, he's pretty good, knows what he's talking about.."
It should even have phrases like "based on our current understanding..."
or "while further study may show otherwise...", that is not arrogant in
thinking they have all knowledge about the subject.
