Ok, so you are wondering what to do with those few
Raspberries/Blackberries/Blueberries that have grown in the garden but
there
aren't enough for a jam/jelly.
Berry Cream Delight
8-10 Berries (Your choice of fruit but works *really* well with
Blackberries) hold back 2 for "Garnish"
4 Tbsp Double Cream
1 tsp Cider Vinegar
3 tsp Raspberry Liqueur (or Cassis if you prefer)
3 Tbsp of Rasberry Jam/preserve
Put ingredients in a blender or into a small jug and whizz with a hand
blender until smooth
when "pureed" spoon into whatever you like to add it to. Plonk a berry on
the top of each serving if used on Avocados etc
Works well on Avocado halves
It's fine on it's own with a spoon for the piggies amongst us ;-)
Goes great on top of meringue nests
Brilliant on a cheesecake
The list is endless........
Serves two as the above recipe
Just multiply by however many people you want it for.
