John and I were invited to dinner at the home of one of his patrons in
Kansas. (They own 13 of his paintings.) They prepared a wonderful repast
for us. The tenderloin was marinated overnight in a combination of Hoisin
Sauce, Worcestershire, fresh ginger root, a little garlic. 350F in the oven
for 30 minutes and then finished on the grill 7 minutes per side. The beef
was wonderfully flavourful and cooked to perfection graduating from
medium-rare on the ends to medium in the middle.
To accompany the meal, rosemary new potatoes also done on the grill (in
foil) while the meat cooked. Nothing more than a generous glug of olive
oil, a little salt & pepper and rosemary snipped fresh from the garden.
They also served sauteed baby carrots, a fresh baguette and a very nice red
wine whose name escapes me.
It was a very nice way to end the day after having spent it working at the
art show in the heat, then having to stow the unsold paintings back in the
truck, tear down the canopy, etc. They are very nice people and gracious
hosts.
