    Here is my mother in law.s recipe for beef stew

    Mary McKee's Beef Stew

    FOR 6-8 SERVINGS:

    2 lbs stew meat
    1 onion, coarsley chopped
    2 stalks celery, coarsley chopped
    5 carrots, sliced
    2 tspn salt
    1 tblspn sugar
    2 tblspn instant tapioca
    1/2 cup V8 juice (vegetable juice, you can also substitute tomato juice)
    1/2 cup beef broth
    6 potatoes, peeled and chopped (approx 2 lbs)

    Mix all ingredients EXCEPT potatoes in a dutch oven. Cover and bake at low
    heat, 250 degrees for about 2 1/2 hours. Add potatoes and bake 1-1 1/2
    hours more
