  1. Beef and Potato Hash

    6-8 lb. Stew meat, or cubed steak ,cut in bit sized pieces
    flour and season with (optional: salt) and pepper
    8 good size potatoes peeled; cubed or shredded
    1 medium onion, chopped finely
    1/2 green pepper, chopped (optional)
    6-8 large eggs, these will be poached in pot
    1/4 cup of Canola oil

    Lightly cover bottom of Dutch oven pan or pot with Canola oil. Place
    floured and seasoned meat into pot. Watch that you don't have heat
    higher then medium or high-medium setting for electric stove. If you
    have gas, just on medium flame too. Now add potatoes, onion, green
    peppers, and cook till complete done. Then make little spoon
    indention's on top of the potato and meat mixture. Place in the eggs
    and cover Dutch oven pan or pot; then lower the temperature and steam
    till egg yokes are completely done. Now you can take the pot to the
    table and place on hot pad and serve. Makes 6-8 servings.
