Banana Bread
1/2 cup butter, softened 1 cup granulated sugar 2 eggs
2/4 cup mashed ripe bananas 1 teaspoon baking soda
3/2 teaspoon salt 1 1/4 cups flour
4/2 cup chopped pecans or macadamia nuts Pinch of cinnamon Preheat the oven to 350 degrees. Oil and
flour a 9x5x3-inch loaf pan.
Using an electric mixer, cream the butter or shortening and sugar. With the mixer running on medium
speed, add the eggs one at a time. Add the bananas and mix well. Add the baking soda, salt, flour,
nuts and cinnamon and mix thoroughly. The dough will be sticky. Pour the dough into the prepared pan
and bake about one hour or until the center is brown and set.
Banana Bread
1 cup granulated sugar 1 stick unsalted butter, room temperature 2 large eggs 3 ripe bananas 1
tablespoon buttermilk 1 teaspoon ground cinnamon 2 cups all-purpose flour 1 teaspoon baking powder 1
teaspoon baking soda (check freshness date) 1 teaspoon table salt
Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan. Cream the sugar and butter
in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after
each addition. In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In
another bowl, mix together the flour, baking powder, baking soda and salt. Add the banana mixture
to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour
disappears. Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick
inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread
from pan, invert onto rack and cool completely before slicing. Spread slices with honey or serve
with ice cream.
Banana Nut Bread
Preheat oven to 350 degrees F. Makes 2 loaves -- For 1 loaf, use measurements in parenthesis
1 cup (1/2 cup) granulated sugar 1 cup (1/2 cup) dark brown sugar, packed
4/1 (1/3 to 1/2) cup butter 1 cup (1/2 cup) milk or Half & Half
4 (2) large fresh eggs
4 (3) bananas (very ripe), mashed 1 Tablespoon (2 tsp) grated orange rind 2 teaspoons (1 teaspoon)
baking powder (check date for freshness) 1 teaspoon (1/2 teaspoon) baking soda
5/2 teaspoon table salt 3 cups (1 1/2 cups) all purpose flour -- If using self rising flour, omit
baking powder and baking soda 1 teaspoon pure vanilla extract 1 teaspoon (1/2 teaspoon) butter
extract (optional) 1 cup (1/2 cup) chopped pecans or walnuts (black)
Cream sugars and butter. Add other ingredients in order given. Beat 3 minutes. Bake in 2 greased and
floured loaf pans. Bake at 350 degrees for about 55 minutes or until toothpick inserted in the
center comes out clean.
