Darryl, I made your banana bread this morning, it was delicious. I had enough bananas, I had to
double the recipe. I used brown sugar because I was running low on white sugar. Turned out great.
Thanks for the recipe, I will keep this one.

BANANA BREAD
1 3/4C AP flour
2/3C Sugar 2tsp baking powder
3/2tsp baking soda
4/4tsp salt 1C mashed ripe bananas
5/3C shortening 2tsp milk 2 eggs
6/4C chopped nuts (optional, I don't use them)
In a large bowl, sift ONE CUP of the flour along with the sugar, baking powder, baking soda and
salt. Added the mashed bananas, shortening and milk. Beat with a blender on low until blended, then
on high for about 2 minutes. Add eggs and beat until well blended. Add nuts if you're so inclined.
Pour batter into a 8x4x2 loaf pan and bake at 350F for 50-55 minutes or until the bread passed the
toothpick test. Cool in the pan for 10 minutes, then remove to a cooling rack.
