  1. Baked Onions Stuffed With Feta

    Serves 4
    Recipe By: dobra zemljo

    4 large red onions
    1 tablespoons Olive oil
    1/4 cup pine nuts
    4 ounces Bulgarian Feta Cheese
    1/2 cup bread crumbs
    1 tablespoons chopped cilantro
    salt and ground black pepper.

    Peel the onions and cut a thin slice from the top and bottom of each,
    then place them in a large saucepan of boiling water and cook 10-12
    min. With fingers or a small knife, remove the inner sections of the
    onions (leave about 2-3 outer rings).
    Finely chop the inner section and saute them for 4-5 min in a pan,
    until golden. Add the pine nuts and stir fry. Crumble the Bulgarian
    Feta Cheese in a small bowl and stir in the onions, pine nuts, bread
    crumbs and cilantro and season it.
    Spoon the mixture into the onion shells, cover loosely with foil and
    bake for about 30 minutes.
    For a great brown look, remove the foil for the last 10 minutes.

    Serves 4

    Cook's tip:
    Excellent dish when served hot.
