    This is the Manicotti I make. It's easy and good.

    Baked Manicotti

    Meat-Tomato sauce or Alfredo Sauce, Homemade or your favorite
    jarred(sometimes I use Tomato-Meat sauce and sometimes the Alfredo).

    1 1/2 pounds (3 cups) fresh ricotta, drained
    2/3 cups grated Romano or Parmesan cheese(or both equally mixed)
    2 slightly beaten eggs
    1/4 cup snipped parsley
    1/2 teaspoon dried basil
    1/2 tespoon oregano
    1/8 teaspoon nutmeg
    1/2 teaspoon salt
    Dash pepper
    8 manicotti shells
    1/2 cup grated Romano or Parmesan cheese(or both equally mixed)

    Combine ricotta , 2/3 cup Romano or Parmesan(or mixed) cheese, eggs,
    parsley, 1/2 teaspoon salt, oregano, basil, nutmeg and dash pepper. Cook
    manicotti shells in boiling salted water till just tender; drain. Rinse
    shells in cold water. Stuff manicotti with cheese mixture. Use a small
    spoon or cut the shells lengthwise with scissors; open to fill. (or use a
    pastry bag or make your own (I snip off the end of a large Freezer bag).
    Pour half the Tomato-Meat or Alfredo sauce into 12 x 7 1/2 x 2-inch baking
    dish. Arrange stuffed manicotti in a row. Top with remaining sauce.
    Sprinkle with 1/2 cup Romano or Parmesan cheese, or equally mixed. Bake in
    moderate oven 350 degrees for 30 to 35 minutes. Makes 6 to 8 servings.
