Baked Chimichangas
Fillings
shredded beef
shredded chicken
shredded pork
coarse ground beef
Filling seasonings
chopped onions
minced garlic
toasted ground cumin
chili powder
oregano
seeded minced jalapeno pepper or serranos
salt & pepper
ground cinnamon or allspice
cilantro
canned chopped green chilis
saute shredded meat of choice with your choice of spices add about 2-3
tablespoons of filling to a flour torilla , and roll as you would a
burrito , now here the trick to baking them spray them with oil or other
non stick cooking spray and bake till golden brown at 350 top with your
favorite salsa this can be chili con carne, salsa verde, salsa rojo, or a
mole sauce, top with a little cheese of choice and return to oven till
cheese is bubbly serve with guacamole refried bean and Mexican style rice.
personally , I'd fry them , but I understand with certain health issues
and what not at hand these days.
Also, sorry for such a loose recipe , but after working in a Mexican
restaraunt as a chef/cook , I just basically sling these together at home
without thinking about what goes in them, but isnt that what is fun about
cooking experimentation?
