  1. This Bailey's Cheesecake does require baking, however, it is easy to make and well worth it.

    Bailey's Chocolate Chip Cheesecake

    Heat oven to 325 degrees

    Crust--Spray 9-inch springform pan with oil 2 cups crushed graham cracker crumbs
    1/4 cup sugar 6 Tablespoons melted butter Combine in a bowl, pour into springform pan and press on
    bottom and 1-inch up sides. Bake about 7 minutes. Filling-- 2 1/4 pounds soft cream cheese 1 2/3
    cups sugar 5 eggs, room temperature 1 cup Bailey's 1 Tablespoon Vanilla

    Blend by beating first the cream cheese, then adding the rest of the ingredients one at a time.
    Sprinkle bottom of crust with 1/2 cup chocolate chips (semi-sweet), Spoon in filling. Sprinkle with
    another 1/2 cup of chocolate chips. Bake until puffed and springy in the center and golden brown,
    about 1 hour and 20 minutes. Cool completely then remove sides of the pan.

    Coffee cream--

    1 cup of chilled whipping cream 2 tablespoons of sugar 1 teaspoon of instant coffee

    Beat 1 cup of chilled whipping cream lightly, add 2 tablespoons of sugar and 1 teaspoon of instant
    coffee. Beat until firm enough to spread on top on cake.
