Bacon Muffins
Serves 12

2 cup sifted all-purpose flour
1 tablespoons baking powder
1/2 teaspoons salt
1 tablespoons granulated sugar
Bacon drippings from cooking bacon
1 cup whole milk
2 eggs -- well-beaten
3 to 4 slices bacon -- cooked and crumbled
Preheat oven to 400 degrees. Grease a muffin pan; heat in oven. Sift the
flour with the baking powder, salt and sugar. Stir in bacon drippings,
milk and eggs. Stir in crumbled bacon. Mix just until blended. Spoon
batter into the hot muffin pan; bake for about 20 minutes or until golden
brown.
