Hi Pooh -
I didn't freeze individual slices. There were 5 people in this household at
the time (I'm the only low-caber) and the cheesecake was gone in 2 days,
lol. The non-low carbers liked it as much as I did -- and devoured it!
I really don't think there would have been a problem with the whipped cream
topping because it wasn't fluffy; more like an icing. After I mixed the
whipped cream with the blueberries and spread it on the cheesecake I let it
sit in the refrigerator for several hours. After it chilled it gained the
consistency of regular cake icing.
Boy howdy, was it good!
