My sister recently visited and brought me some Atkins baking mix thing which can be used for pancakes and bread.
Has anybody gotten the pancake recipe to work? I don't like sweet things really, so left out the sweetener and vanilla, but otherwise I followed the recipe faithfully.
But instead of a getting a pancake batter that is reasonably thick and turns into semi-rising good pancakes I always end up with a runny gruel that takes forever to solidify in the frying pan and tastes just dreadful.
I know I have the measurements according to the package.
But I recently tried CarbSense pancake mix (Buttermilk), and it's way too thick. I kept adding liquid, but still too thick. Tastes pretty good though.

I add frozen blueberries and Splenda or I use Davinci syrup for part of the liquid and make waffles in an electric waffle maker. They come out pretty good (you wouldn't confuse them with Eggos, though). I get about 11 waffles out of one package and freeze them in pairs - reheat them in the toaster at work like any frozen waffle. The Ocean State Job Lot stores in New England have been selling the pouches for $1.79 - I notice they're still $4.99 at Stop & Shop. Crazy, huh? Haven't tried pancakes - I figure waffles reheat better in a toaster. I got the waffle maker for $12 at Job Lot... K.
