Didn't there used to exist a two-man time trial of about 50K that the
pros used to run? Is it still around?

Yes -- Armstrong and Eki have done it at least twice and I think Lance is
teaming with Hincapie to do one this Sunday.

GP Eddy Merckx is Aug 29 in Brussels. First run in 1980. Up until 1998
it was an individual TT, since then it's 2-man TTT. Not always the same
route but usually 55-65km. Almost all very famous names in the list of
past winners.

I think the OP was referring to the Baracchi Trophy, a now defunct race.

Is it the Grand Prix Miguel Indurain? If so, Armstrong and Ekimov won it
once.

There are several. The most established is the Barachi Trophy. It is
normally scheduled in the fall. There is also the Eddy Merckx Grand Prize TT
which started as an ITT and was run as a 2 man TT for several years. I don't
know about its current status. There is another that Armstrong will be doing
with Hincapie but I am not aware of its history. I don't think it is the
Eddy Merckx or the Barachi (named after a wealthy Italian that offers the
prize for this race) but it could be one of those events that has been
renamed.

I remember a year where Hinault and Moser entered the Baracchi as a
team. That was reallly cool!

Speaking of this kind of team-of-2 races, there used to be a race in
which a pro was teamed with a blind rider. I think that this race was
run in Italy, still in the late seventies. Does this ring a bell?

Yes it is. It´s called now the LuK-Challenge Cup in Bühl/Germany, it is on
this saturday. Armstrong is coming( with Hincapie?). Also Basso/Jaksche,
Julich/Voigt, Voeckler/? , Rabobank, Gerolsteiner, Quckstep and some others.
Ullrich and Klöden not, I guess. They do the WC race on next day here in
Hamburg.

Telekom International GP (Baden-Baden)?
Paired up Boardman and Chiappucci in 1993 (his first pro race) as I recall.

That's not the one. The GP Miguel Indurain - or the Campeonato Vasco
Navarrro de Montaña, Gran Premio Navarra, Trofeo Comunidad Foral de
Navarra as it was once known - is a road race in navarra (big mig's
home region).
