    From: "Cindy" <[email hidden]> I was given a
bag of rye flour. Is there something you can use this for
    which is not bread?

    Applesauce Rye Muffins

1 1/2 cups of all purpose flour
3/4 cup of rye flour 2 teaspoons of double acting baking
powder 1 teaspoon of ground cinnamon
4/2 teaspoon of baking soda 1 1/2 cups of applesauce
5/4 cup of firmly packed brown sugar 1 egg 2 tablespoons of
vegetable oil 3 ounces of mixed dried fruit, diced

Preheat oven to 375:F. In a medium bowl, combine the flours.
baking powder, cinnamon and baking soda. Use a wire whisk,
in a separate medium bowl, beat together the applesauce,
sugar, egg and oil, stir into the flour mixture, along with
the dried fruit, mixing well. Spray a twelve 2
6/2 inch diameter nonstick muffin pan cups with nonstick
cooking spray. Fill each cup with an equal amount of
batter. Bake for 20 to 25 minutes, or until muffins are
lightly browns and a toothpick inserted into the middle of
the muffin comes out clean). Transfer the muffins from the
pan to a wire rack to cool. Linda
