Applesauce Raisin Loaves
1 1/4 cups all purpose flour 1 cup quick rolled oats
3/4 cup granulated sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt
4/4 teaspoon cinnamon (divided)
5/2 teaspoon nutmeg 1 1/4 cups applesauce 2 eggs
6/4 cup raisins
7/3 cup vegetable oil
8/4 cup milk 2 tablespoons brown sugar 2 tablespoons chopped pecans
In large bowl, stir together flour, oats, granulated sugar, baking powder, baking soda, salt, 1/2
teaspoon of the cinnamon, and nutmeg. In medium bowl, combine applesauce, eggs, raisins, oil, and
milk. Make well in center of flour mixture; stir applesauce mixture into flour mixture just until
moistened. Pour batter into 4 greased miniature loaf pans (5 1/2 x 3 x 2 1/4 ) In small bowl,
combine brown sugar, pecans, and remaining 1/4 teaspoon cinnamon; sprinkle on top of loaves. Bake in
350 degree oven for 30 to 35 minutes, or until wooden pick inserted in center comes out clean. Cool
in pans on wire rack for 10 minutes. Remove from pans and cool an additional 5 minutes. Serve warm
or toasted.
Makes 4 mini loaves
