Apple Cabbage Slaw Veronica

This recipe, a spa cuisine favorite at The Oaks in Ojai and The Palms
in Palm Springs, is from the book "The Ultimate Recipe for Fitness" by
spa owner Sheila Cluff and recipe developer Eleanor Brown. Sheila loves
this slaw because it ravels well, making it perfect for picnics and pot
lucks, just be sure to chill the salad and dressing separately until
it.s time to serve.
Salad
1 1/2 cup cabbage, grated
1/2 cup oranges, sectioned and sliced
1/2 cup grapes, halved
1/4 cup celery, thinly sliced
1/2 cup red apple, cored and diced
6 large whole lettuce leaves
Dressing
1/2 cup non-fat yogurt
1/2 tsp. freshly grated lemon zest
1/2 tsp. lemon juice
1/2 tsp. honey
Makes 6 Servings
35 calories per serving
8 gram carb
trace (2%) fat
Combine all dressing ingredients and mix well. Toss together all salad
ingredients except lettuce leaves. Just before serving, toss salad with
dressing and place each serving on a lettuce leaf.

Apple Cole Slaw
"This is our favorite cole slaw recipe, a yummy combo of fruit and
veggies in a sweet dressing."
Yield: 6 servings.
cups chopped cabbage
1 unpeeled red apple, cored and chopped
1 unpeeled Granny Smith apple, cored and chopped
1 carrot, grated
1/2 cup finely chopped red bell pepper
2 green onions, finely chopped
1/3 cup mayonnaise
1/3 cup brown sugar
1 tablespoon lemon juice, or to taste
In a large bowl, combine cabbage, red apple, green apple, carrot, red
bell pepper, and green onions. In a small bowl, mix together
mayonnaise, brown sugar, and lemon juice. Pour dressing over salad.

Yield: 4 servings
3/4 cup sour cream
1/4 cup granulated sugar
3 tablespoons apple cider vinegar
2 tablespoons ranch seasoning and salad dressing mix
1 (8-ounce) package shredded cabbage and carrots
3 green apples, cored and diced
3 green onions, thinly sliced
3 stalks celery, chopped
Salt and pepper
Whisk sour cream, sugar, vinegar, and ranch seasoning in large bowl to
blend.
Add cabbage mixture, apples, green onions and celery. Toss to coat.
Season, to taste, with salt and pepper. Cover tightly and chill for 20
minutes or up to 4 hours. Serve cold.

Apple Slaw
Yield: 5 Servings
An alternative to the usual cole slaw this combination of apple,
cabbage, celery, carrot and onion is a delightful addition to a meal.
2 Apples, thinly sliced
2 Tbsp Lemon Juice
3 cup Shredded Cabbage
Stalk Celery, chopped
Carrot, grated
Med Onion, thinly sliced
1/2 cup Sour Cream
1/4 cup Mayonnaise
3/4 tsp Celery Salt
Sprinkle sliced apples with lemon juice. Mix with cabbage, celery,
carrot, and onion.
Combine sour cream, mayonnaise and celery salt. Toss with apple
mixture and serve.
Lemon juice keeps apples from discoloring.
