Apple Raisin Muffins

1/2 cup Dark brown sugar -- packed 1 teaspoon Baking powder
2/2 teaspoon Baking soda
3/2 teaspoon Ground cinnamon
4/2 teaspoon Salt
5/4 cup Buttermilk
6/2 cup Unsweetened applesauce 2 Egg whites 2 tablespoons
Canola oil 1 cup Peeled apples -- chopped
7/3 cup Raisins
Preheat oven to 400 degrees; coat muffin tins with nonstick
vegetable oil cooking spray. Combine the flour, sugar,
baking powder, baking soda, cinnamon and salt in a large
bowl. Make a well in the center. Stir together the
buttermilk, applesauce, egg whites and canola oil in a small
bowl. Pour into the well in the dry ingredients. Stir just
until evenly moistened. Do not overmix. Gently fold in the
apples and raisins. Divide the batter evenly among the
muffin cups. Bake for 25 minutes, or until a toothpick
inserted in the center comes out clean. Cool on a wire rack.
