    Amount Measure Ingredient -- Preparation Method -------- ------------
    -------------------------------- 1 1/2 cups All-purpose
    flour -- unbleache 1 cup Whole wheat flour 2 teaspoons
    Baking powder 1 teaspoon Baking soda
    1/4 cup Brown sugar, packed -- optiona
    2/4 teaspoon Ground cinnamon
    3/4 teaspoon Ground nutmeg 1 cup Oat bran 1 1/2 cups
    Applesauce 1 cup Apple juice 1 teaspoon Vanilla extract 1
    tablespoon Orange rind -- grated 2 Eggs
    4/4 cup Apples -- chopped

    Preheat oven to 400 degrees; grease muffin tins, or line
    with paper baking cups. Measure and sift the flours, baking
    powder, baking soda, brown sugar and spices together into a
    large bowl. Sift a second time. Add the oat bran and toss to
    combine; set aside. Whisk the applesauce, juice, vanilla
    extract, orange rind and eggs together in a medium bowl. Add
    the apples and ctir to combine. Pour into the dry
    ingredients. Stir just until mixed; do not overstir. Spoon
    the batter into the muffin cups, filling each nearly to the
    top. bake for 15 to 20 minutes. Cool in the tins for at
    least 10 minutes. Remove the tin and brush the top of each
    muffin with canola oil. Penny Halsey
