  1. Apple Cake

    3 cups flour
    1-1/2 teasp. baking soda
    1/2 teasp. salt
    1 teasp. cinnamon
    2 eggs
    1-3/4 cups sugar
    1/2 cup brown sugar
    1-1/4 cups oil
    2 teasps vanilla
    3 Granny Smith apples, peeled and chopped. (I use food processor)
    1 cup chopped pecans

    Sift together flour, soda, salt and cinnamon. Beat eggs and sugars until
    creamy, add oil and vanilla, beating until smooth. Add dry ingredients and
    mix until stiff dough forms, stir in apples and pecans. Pour into a
    greased and floured tube pan, 13x9x2 pan or 2 loaf pans. Bake at 350 for 1
    hour or until done. This is very moist. Cut a large slice or you will be
    back for seconds.
