Apple Butter Scones
Gold Medal
2 1/4 cups flour
3 teaspoons baking powder
1 tablespoon brown sugar
1/4 cup plus 1 teaspoon melted butter
2 eggs, beaten
1/2 cup whipping cream
1/4 cup apple butter
2 teaspoons cinnamon-sugar
Mix flour, baking powder and brown sugar. Stir in 1/4 cup butter, eggs,
cream and apple butter until soft dough forms. Place on lightly floured
surface. Pat into 8-inch round about 3/4 inch thick. Brush with the 1
teaspoon butter. Sprinkle with cinnamon sugar. Place on ungreased cookie
sheet. Cut into 8 wedges. Bake at 425 10-15 minutes or until golden brown.
I baked on a Silpat and they turned out perfectly. Next time I wouldn't
pat them quite so thin. I ate them warm with more apple butter.
