When we were on vacation last year, we ate at a Hawaiian influenced
restaurant. The raw carrots were shredded like cole slaw and had a
creamy sweet sauce. I thought the sauce was sweetened mayonnaise so
never asked. It was very good so I tried making the dish at home but it
wasn't the same. Any ideas what this sauce might be?

GoombaPineapple juice is good. I frequently make shredded carrot salad. The sauce
I make is mayonnaise, sugar, and cream to make it the right consistency. I
don't over-sauce it. I always add raisins to it. My mother-in-law used
crushed pineapple, so there was probably some pineapple juice in her sauce.
I prefer mine, but her's was perfectly edible.Charlie
