Amogio
3 tablespoons fresh minced garlic
1/2 cup olive oil
1/2 cup dry white wine
1/2 cup lemon juice
1/4 cup fresh chopped Italian parsley
1 tablespoon fresh chopped mint
1/4 teaspoon red pepper flakes
Prepare the Amogio by combining the garlic, olive oil, white wine,
lemon juice, parsley, mint, and red pepper flakes in a bowl. Reserve
1/2 cup of the marinade and set aside in refrigerator. Cut wings in
half at joint. Place the wings in a large resealable plastic bag. Add
the rest of the Amogio to the chicken and marinate for at least an
hour, preferably overnight, covered, in the refrigerator.
Kansas City grilling queen Judith Fertig says Amogio is an Italian
marinade. You can marinate the chicken wings for as long as 24 hours.
