    Almond Amaretto Bread Pudding

    1 loaf French bread
    4 cups milk
    1 6 oz can condensed milk

    6 each eggs
    2 cups sugar
    3 tsp vanilla extract
    1 tsp almond extract
    1/4 cup Amaretto

    1 cup ground cinnamon
    1 cup toasted almonds
    2 tsp butter or margarine

    Tear French bread in pieces. Soak in milk and condensed milk.
    In separate bowl mix eggs, sugar, vanilla and almond extract and
    amaretto.
    In 2 inch x12 inch cooling pan grease with butter or margarine, combine
    all ingredients, sprinkle almonds pieces and cinnamon on top. Cook at
    350º for 30 minutes until firm. Use butter knife to stick in middle,
    if fork comes out clean, it's ready!

    Amaretto Bread Pudding

    1 lb bread or cake cut in pieces
    1 qt half and half
    2 Tbsp unsalted butter at room temperature
    2 Tbsp almond extract
    3/4 cup raisins
    3/4 cup sliced almonds
    Amaretto sauce (recipe follows)

    Combine bread and half and half in large bowl. cover and let stand 1
    hour, stirring occasionally. Position rack in center of oven and
    preheat to 325 F. Grease a 9x13x2 inch baking dish with 2 Tbsp butter.
    whisk sugar, eggs and almond extract. stir into bread mixture. gently
    fold in raisins and almonds. Spoon into prepared dish. Bake until
    pudding is firm, about 50 minutes. let cool. Do not refrigerate before
    serving.

    Amaretto Sauce

    1 cup sugar
    1 stick unsalted butter
    1 egg well beaten
    1/4 cup amaretto Liqueur

    Stir the sugar and butter on top of double boiler, set over simmering
    water, until butter melts, sugar dissolves and mixture is very hot.
    remove from over water and whisk in the egg. Continue whisking until
    cooled to room temperature. Mix in the Amaretto. Serve as a top for the
    Bread Pudding.

    1-1 1/2 lb loaf French bread, cubed or torn
    1 qt half & half
    1 1/2 cup sugar
    1 Tbsp almond flavoring
    1 cup almonds, sliced
    3 eggs
    Sauce:
    1/2 lb butter
    2 cups powdered sugar
    1 egg
    1/3 cup Amaretto

    Pour half & half over bread cubes. Add sugar, eggs, almond flavoring
    and almonds. Mix well. Pour into buttered 9x11 inch pan. Bake at 350
    degrees for 40 minutes. Mix egg and powdered sugar. Melt butter in
    powdered sugar. Melt butter in saucepan. Add powdered sugar mixture.
    Cook until smooth. Take off heat and add Amaretto. Cut pudding into
    squares and serve hot with warm sauce and whipping cream.

    Panettone Bread Pudding with Amaretto Sauce

    Sauce:
    1/2 cup whipping cream
    1/2 cup whole milk
    3 tablespoons sugar
    1/4 cup amaretto liqueur
    2 teaspoons cornstarch

    Bread Pudding:
    1 (1-pound) loaf Panettone bread, crusts trimmed, bread cut into 1-inch
    cubes
    8 large eggs
    1 1/2 cups whipping cream
    2 1/2 cups whole milk
    1 1/4 cups sugar

    To make the sauce: Bring the cream, milk, and sugar to a boil in a
    heavy small saucepan over medium heat, stirring frequently. In a small
    bowl, mix the amaretto and cornstarch to blend and then whisk into the
    cream mixture. Simmer over medium-low heat until the sauce thickens,
    stirring constantly, about 2 minutes. Set aside and keep warm. (The
    amaretto sauce can be made 3 days ahead. Cover and refrigerate. Rewarm
    before serving.)

    To make the bread pudding: Lightly butter a 13 by 9 by 2-inch baking
    dish. Arrange the bread cubes in the prepared dish. In a large bowl,
    whisk the eggs, cream, milk, and sugar to blend. Pour the custard over
    the bread cubes, and press the bread cubes gently to submerge. Let
    stand for 30 minutes, occasionally pressing the bread cubes into the
    custard mixture. (Recipe can be prepared up to this point 2 hours
    ahead. Cover and refrigerate.)

    Preheat the oven to 350 degrees F.

    Bake until the pudding puffs and is set in the center, about 45
    minutes. Cool slightly. Spoon the bread pudding into bowls, drizzle
    with the warm amaretto sauce, and serve.
