  1. Alberta Dust For Fried Chicken

    Serves 4
    Recipe By: Karen Kirkwood

    1/2 cup cornmeal
    2 tablespoons flour
    2 tablespoons grated Parmesan cheese
    1 tablespoons paprika
    1 teaspoons poultry seasoning
    1 teaspoons dried basil
    1/2 teaspoons each -- salt and pepper
    1/4 cup milk
    1 pounds boneless skinless chicken breasts
    1 pounds boneless -- skinless thighs
    1/2 pounds peanut or vegetable oil

    In shallow bowl, stir together cornmeal, flour, cheese, paprika, poultry
    seasoning, basil, salt and pepper. Place milk in a shallow dish. Dip
    chicken into milk, then into cornmeal mixture, turning to coat all over.
    In a large frying pan, heat oil over medium heat. Cook chicken, turning
    once, for about 10 minutes or until crispy outside. Remove to a 350 F
    oven for 10 minutes to finish crisping. Serve hot or cool. Serves 4
