  1. I've never tried Gurnard fish before but my daughter has brought some
    home for our dinner tonight. She wants to batter it, so we're going to
    try this recipe:

    Lemon Batter Fish

    1 cup flour
    2/3 cup water
    1/3 cup lemon juice
    1 egg, beaten
    1/2 tsp. sugar
    1 tsp. baking powder
    3/4 tsp. salt
    1 lb. fish fillets, cut in small chunks

    In bowl, mix 1 cup flour, water, lemon juice, egg, baking powder, salt
    and sugar. Dip fish in additional lemon juice, coat with flour, then
    dip in batter. Fry in hot oil until golden.
