1/2 cup shortening
1 cup butter, softened
2 1/2 cups sugar
5 eggs
3 cups flour
8 oz. 7-Up or other lemon-lime soda
1 tsp. vanilla
1 tsp. lemon extract
Preheat oven to 325 . Lightly grease a large bundt pan or tube pan. Cream
shortening, butter and sugar together. Beat in eggs and extracts.
Alternate mixing in flour mixture a& 7-Up, mixing just until blended. Pour
batter into pan and bake about 1 hr. 30 min. until a toothpick comes out
clean.
Cool in pan 5 min. before removing to cool completely.
7-Up Pound Cake
3 cups of cake flour
3 cups of sugar
5 eggs
4 sticks of butter
3/4 cup of 7-up
1 tsp of almond extract
1 1/2 tsp. vanilla extract
Cream sugar, butter and eggs until creamy. Add flour 1 cup at a time, add
extracts and last add 7-up. Pour into prepared pan. The batter will be
thick this is the best pound cake i have ever had. Oh cook at 350 for
about an hour
Classic 7 UP Pound Cake
1 cup butter, softened

1 teaspoon vanilla extract
1/2 teaspoon almond extract
5 eggs, at room temperature
3 cups all-purpose flour
1/2 teaspoon salt
1 cup 7 UP
For the Glaze:
1/4 cup 7 UP
1/2 cup sugar
Preheat oven to 300 F. Grease and flour a 10-inch tube pan. Combine
butter, shortening, sugar, vanilla and almond extract in the bowl of an
electric mixer. Beat until light and fluffy, about 5 minutes. Add eggs,
one at a time, beating well after each addition. In a separate bowl,
combine the flour and salt, and add to butter/sugar mixture alternately
with 1 cup 7 UP, beating well after each addition. Spoon batter into
prepared 10-inch tube pan, and bake for 1 hour and 45 minutes, or until
cake tester comes out clean. Cool in pan on a wire rack for 10 minutes,
then invert on serving plate and remove pan. While cake is cooling, make
the glaze by stirring together the 1/4 cup 7 UP and 1/2 cup sugar in a
saucepan. Bring to a boil over medium heat, and boil 2 or 3 minutes or
until sugar is completely dissolved. Punch holes in top of warm cake with
a toothpick. Spoon glaze over cake, and cool completely before serving.
7-Up Cake
1 1/2 cup (3 sticks) butter, softened
3 cup granulated sugar
5 eggs
3 cup all-purpose flour, sifted (or use cake flour)
2 Tbsp lemon extract
3/4 cup 7-Up
Preheat oven to 325 degrees F. Grease well and flour a Bundt or tube pan.
In a large bowl, cream butter thoroughly. Slowly add sugar and cream
together until fluffy. Beat in eggs, one at a time, beating well after
each addition. Slowly add flour and mix well. Stir in lemon extract and
7-Up. Pour batter into prepared pan. Bake for 1 1/2 hours or until done.
