7 Speed Shimano Upgrade

Yes. You'll need new shifters, Freehub body, cassette, chain and
handlebar tape.

You'll also need to re-dish your rear wheel.

Yep, the thickness isn't the issue but the ability for the left STI lever to
shift the present front der.
Another problem may be the lack of shift assist thingys, pins and ramps.

Thanks. I'm going with bar end shifters anyway, so issues with front
shifting shouldn't be an issue.

One of my bikes has a Shimano 9 speed drivetrain, bar end shifters, and
non-ramped/pinned chainrings. It shifts fine - a bit noisy, perhaps,
compared to a ramped & pinned chainring, but fine.
